What - José Pato Oviedo is a winemaker who is frighteningly passionate about working with native Spanish grapes. He is committed to representing his region through the wine he makes which, happily, happens to be really, really delicious. He is known for keeping his cellars absolutely spotless and for his two Can Do Sil offerings to the world of natural wine lovers.
For the Blanco, terrace grown Palomino and Godello grapes are sourced from sustainably operated vineyards dotted in the hills of Valdeorras. Each grape is fermented separately in stainless steel tanks before being blended and further aged on its yeasts for 3 months. The resulting juice is only lightly filtered and bottled with minimal sulphite.
This is an unoaked, zippy yet fruited white wine. It boasts fresh notes of lemon, pears, stonefruit and herbs. As summer sippers go, this is what you want! The finish is pleasantly short which keeps you wanting more.
