What - Château Ollieux Romanis is a winery situated in the Massif du Pinada in the Corbières, a part of France famed for history and culture. There was once a fair amount of conflict in the region, but now the wineries work together with the municipality as allies with the shared goal of protecting the unique terroir. They work with respect for the environment in all aspects of their winemaking process and the result is terroir-driven, passionate wines with heaps of charm.
This bottle comes from their Cuvée Classique range. Heat and light are the two central aspects of the vineyard's Mediterranean climate. The blend of grapes are hand-harvested from vineyards ranging from 10-35 years-old, macerated for 6 to 8 hours and directly pressed at low pressure to extract the fruit. The juice is then aged in stainless steel before bottling.
If you're after a white wine to pair with food, look no further; this guy will stand up to almost anything. It's bone dry and full of tropical flavours, honeycomb, caramelised pecans, apricot and banana chips. The acidity and tannins remain soft, but it still packs a boozy punch.
