What - Churton's second generation of winemakers aim to express their wine's true, natural roots through biodynamic methods and a passion for the land. They inject spirituality into their craft, believing that the best wine comes from makers who have an emotional connection to the land they farm.
Each year they consult the biodynamic calendar and make plans around it. The Natural State white is thus an experiment with winemaking traditions which can be seen at every step of the process. Their vineyards were planted back in 2000 in the Waihopai Valley where the climate involves hot, hot summers but very cold winters. Luckily, their vines sit at the edge of a cliff, so any frost quite literally falls away.
All three varieties are hand-harvested on the same day, allowing for integrated flavours in the co-ferment. The grapes are de-stemmed before macerating on skins for 24 hours. They undergo pressing, a cold ferment, 3 months left on lees and then careful racking before an unfiltered bottling.
The Natural State Field Blend is a wine to drink now! It's amazingly aromatic, vibrant and fresh. It's full of blossom, peach and mango with a super long, moreish finish.
