What - Patrick Sullivan is a super fun producer. He farms on biodynamic vineyards with ironstone soils with the aim of producing proper juicy low intervention Aussie wine.
This Cabernet Sauvignon is a necessary addition to your wine rack. It's so, so tasty. The grapes are destemmed, macerated and fermented with natural yeasts in tank for one month before being aged in old oak barrels for 6 months. It's bottle unfined, unfiltered and with minimal sulphite.
This is a great food-friendly wine and banging value for such a well thought out production. It's a beautiful bright red with hefty aromas of cherries and rich spices. Along with red pepper, you get a touch of cacao nib, crushed peppercorn and pleasantly bitter coffee on the palate.
Cherry, balanced, great-value. Vegan. Low intervention. Organic. Biodynamic. ABV 13.3%.
