Grape - Sauvignon Blanc, Chardonnay, Sémillon Blanc, Colombard, Ugni Blanc

Where - Cahors, France

What - Fabien Jouves is infamous for his work at Mas del Périé, creating biodynamic, expressive wines that are respectful of life, plant, man and the entire environment. He really is a champion of natural winemaking not just in France, but around the world, ditching any pretension in the industry and replacing it with fun, individuality and badassery.

His Les Agudes comes from the thirst-quenching range of terroir-driven wines. The combination of grapes is next level - there's some true wine mastery going on over here. The blend comes from various vineyards with an average age of twenty years and mainly limestone soils. Both fermentation and ageing occur in stainless steel vats, barrels and casks for six months retrospectively. As with all his wines, Fabien bottles the juice without fining, filtration and minimal sulphite addition.

This wine is a proper white wine delight. It's hugely expressive, with initial aromas of white flowers, brioche and citrus. The mouthfeel has a buttery touch to it, with flavours of pear, stone-fruit, pineapple yoghurt and fresh bread. It's a really, really banging example of Fabien's talent.

Buttery, flavourful, refreshing. Vegan. Low intervention. Organic. Biodynamic. ABV 13%.
