Fabien is a pioneer of biodynamic winemaking, leading the way in Cahors since 2006 with a more experimental twist on classic varietals. He's a rebellious winemaker who rages against the wine laws machine, causing a fuss over his exclusion from AOC certification. His attitude is great, and his dedication to sustainable farming is what we love to see. Due to his completely hands-off style, he can farm without the use of chemicals for a purer representation of terroir. All his wines are unfined and unfiltered with minimal sulphites.
This red blend is a juicy purple colour in the glass. It's got a vaguely milky mouthfeel, with aromas of macerated strawberries and sweet spice. It's got a rounded sort of vibe with huge fruit expression and very low tannins which make it super crushable. The finish is long and tangy, with zippy underripe raspberries and cherry yoghurt.
Tangy, fresh, smashable. Vegan. Low intervention. Organic. Biodynamic. ABV 12.5%.
