What - Every wine that Fabien Jouves produces has the protection of flora and fauna at its heart. His vineyards in the beautiful region of Cahors are farmed biodynamically with unrivalled respect to the environment. Vinification is also entirely natural and his plot of land, close to the Quercy border, means that the terroir oozes personality into his wine.
The Soif D'Aillerurs is made from a manually harvested field blend of grapes (the three Grenaches, Clairette, Counoise, Cinsault, Muscat de Hambourg, Malbec) that are then pressed in entire bunches. Fermentation occurs in huge concrete vats over 7-days before bottling after 6-months without any oenological inputs. With no fining, no filtration and very minimal sulphite addition, this is a truly delicious example of great natural red wine!
This is a light red wine in both mouthfeel and colour; borderline rosé, almost. It's floral, fruity and dangerously drinkable when the sun comes out. Natural wine lovers will adore this
