What - Fabien Jouves can look down from his high Cahors plot of land upon his badass winemaking kingdom as a proper legend of the industry. Mas Del Périé was only founded in 2006, but since then he has been making knock-out biodynamic wines and a huge fuss surrounding the AOC laws in Cahors (which he has been excluded from due to his more experimental style, much to his frustration).
Because Fabien cares so much about his terroir and the surrounding ecosystems, he opts for a totally low intervention farming method, free of chemicals and pesticides. This translates into his cellar, aiming to produce the cleanest representation of the limestone, clayey soils by not fining, filtering or adding sulphites.
The Sonnam'Bulles is one of his amazing Pet Nats. After the blend of grapes were harvested, they were pressed in whole bunches, fermented in stainless steel before ageing in the bottle for around six months. The result is a funky fizz. You could crush the entire bottle easily and will be treated to banging notes of pear, citrus, honey and acacia alongside that classic Fabien minerality.
You'll want to get a case in for any summer parties or BBQs, 'cus this wine is a full-on crowdpleaser.
