Grape - Sauvignon Blanc
Where - Casablanca Valley, Chile
What - Daniel Miranda started producing wine in his home country of Chile back in 2010 after learning about the world of wine in France, Spain and New Zealand. With Alejandra Toro, this husband and wife team now produce 100% natural wines that are unfined, unfiltered and really something special.
This Sauvignon Blanc is seriously small-batch with only 1050 bottles in existence. Half of the wine has been fermented in new French oak barrels before ageing in them for a further 6 months.
When we first tried this wine we were blown away. We immediately had to have it.
It is refined, elegant and so, so flavourful. You are immediately hit with huge elderflower notes, zingy citrus and fresh minerality. The flavours keep on coming with grapefruit and pink salt. The mouth-feel is balanced with good acidity and persistent roundedness.
Elderflower, elegant, citrus. Vegan. Low intervention. ABV 14%.
