What - Keep Wines are one of the most exciting producers working in Napa right now. The husband and wife team, Jack and JJ, both have some pretty hardcore winemaking credentials, with Jack having worked for Matthiasson and JJ at the Scholium Project. Now, they've teamed up to make organic wine from their favourite varieties; Pinot Meunier and Counoise.
This duo believe that winemaking needs a light hand, so every part of the process in making this bouncy red has low intervention at the forefront. They ferment the fruit as whole bunches in a sealed vessel for carbonic maceration before ageing in old oak, with no fining, filtration or added sulphur. The Counoise grape is rarely used anymore, so it's great to see it being utilised to such a high standard by these guys. We love.
Overall, the resulting red wine is juicy and complex; full of flavour and fresh acidity. Immediately, there are classic red fruit flavours of strawberry and raspberry, but as the wine opens up you might notice violet, pomegranate, cola, rosemary and redcurrant coulis. This is a real standout wine that'll quench just as much as it'll impress with big, bright flavour.
