What - Lidio Carroro is a small boutique winery established by Italian founders. At the heart of everything they do, purity and expression rule. Before anything else, the winemakers want the grapes and the soil to sing for themselves. They adopt a very minimalist approach across all their cuvees.
The Lidio Carraro Da'Vidas is produced from organic grapes harvested over three sites. The grapes are crushed and vinified separately using wild yeasts. After 6 months of ageing in steel, the wines are blended and further aged under CO2 for 4 months. This wine is bottled unfined and unfiltered with minimal sulphite.
If you want to know what the Pinot Noir grape should taste like; this is it. It is light to medium in body, bright and alive with soft forest fruits, macerated strawberry, pepper and herbs.
Fruity, peppery, light. Vegan. Organic. Low intervention. 12.5% ABV.
