What - The Merla is an impressive red wine from the geniuses at Celler De Les Aus. This winery in Alella is home to a young, experimental winemaking couple - Josep and Mireia - who both have an immense passion for natural winemaking and are hell bound on mastering their craft with as little detriment to the environment as possible.
The Merla is crafted from 100% organic bush-trained Monastrell. The wines are naturally fermented in stainless steel and aged in chestnut and acacia wood. These woods are more commonplace in Spain and more sustainable to use than oak. At every step, it is plainly clear that the duo are completely dedicated to proving that their unique terroir is special.
This is a bold, peppery Monastrell with huge waves of black cherry, damson, granite, tealeaf, bay, cedar and toasted spices. The wine is bottled with no fining or SO2 which gives it the brightness that we love to showcase at Wolf Wine.
