What - The Merla is the king of red wines from the geniuses at Celler De Les Aus. Cellar De Les Aus are a young wine making couple - Josep and Mireia. Both have an immense passion for natural winemaking and are hell bound on mastering their craft with as little detriment to the environment as possible. The Merla is crafted from 100% organic bush trained Monestrell. The wines are naturally fermented in stainless steel and aged in chestnut and acacia wood. These woods are more commonplace in Spain and more sustainable to use than oak.
This is a bold, peppery Monestrell with huge waves of black cherry, damson, granite, tealeaf, bay, cedar and toasted spices. The wine is bottled with no fining or SO2 which gives it the brightness that we love to showcase at Wolf Wine. If you're seeking a big, exciting and multi-layered natural wine; this is it.
