What - Vincent Caille has built himself a reputation for crafting wonderfully quirky whites with balance and finesse. The Mouton Noir is a Muscadet for the 21st Century and Vincent works with organic fruit harvested over 8 hectares to produce this contemporary take. Both the Chenin and Melon grapes are vinified on wild yeasts separately before being married together and aging on its lees for one month (a fraction of the usual aging time) to preserve the fresher notes in the wine. The resulting Mouton Noir is bottled with minimal sulphite.
With this beautiful bottle you'll enjoy notes of citrus, tropical fruit, lime leaf, chalk and cream. It's a gloriously dry addition to the shelves from a producer putting his new wave twist on a classic.
