Grape - Pinot Noir
Where - Moravia, Czech Republic
What - Top end parcels of organic pinot noir are sourced from neighbouring volcanic sites. The winery operates in keeping with the techniques of Burgundy. Once harvested, the grapes are cold pressed and vinifed using wild yeasts before aging in a mixture of new and second oaks. After time to settle, the wine is bottled with minimal sulphite and further aged in the bottle before release. This is a truely grown up pinot with great aging potential (if you have the patience). In the glass, this wine offers notes of strawberry, plums, violets, coffee and white chocolate.
Rich, rounded and decadent. Vegan. Organic. Low intervention. 13.5 ABV.
