What - For John House and Ksenija Kostic, the duo behind Ovum, winemaking is all about terroir. They both have regular day jobs which gives them the freedom to experiment with their white wines. Their aim? To make wine that tells a detailed story about the vintage. When you drink an Ovum wine, you can tell almost every detail about it through just the nose and taste. They really are spectacular, with the 'To Love Somebody' smashing our already high expectations.
This Gewurztraminer is absolutely banging. It is fresh, complex and ridiculously aromatic. They chose to ditch stainless steel tanks and instead spontaneously ferment their wine in old oak. To get a mineral richness, they also use a concrete egg for fermentation. This shape means that the lees are constantly kept circulating. This is what creates a strong minerality. Egg-cellent.
High acidity makes this a mouthwatering masterpiece. Notes of fresh orange peel, pineapple, white flowers, peach, mango, stone and steel. The aromas kick-off as soon as the cork is pulled. This is a proper treat of a wine that we'd have on permanent tap at home if that was possible.
Delicious, floral, fresh. Vegan. Organic practicing. ABV 13.5%.
