What - Vincent Caille has built himself a reputation for crafting wonderfully quirky whites with balance and finesse.


The Mouton Noir is a Muscadet for the 21st Century. Vincent works with organic fruit harvested over 8 hectares. Both the Chenin and Melon grapes are vinified on wild yeasts separately before being married together and ageing on its lees for one month (a fraction of the usual ageing time) to preserve the fresher notes in the wine. The resulting wine is bottled with minimal sulphite.


Enjoy dry notes of citrus, tropical fruit, lime leaf, chalk and cream.
