What - Matus Vdovjak is an insanely passionate winemaker who has dedicated himself to making wines truly sing for themselves. After years of commercial winemaking for some larger companies, he realized that you couldn’t showcase a wine’s terroir if you use a specific yeast strain. For him, natural fermentation is key if you are to make exceptional regional wines.
The Oak and Clay is an organic Furmint/Lipovina blend that has been pressed and naturally vinified in impressive clay amphoras for 12 months. It is similarly aged in these amphoras before finishing in oak for 5 months. It is bottled without the addition of sulphite which stays true to Vdovjak's natural methods.
This wine is subtle yet complex with notes of white peach, smoke, cream, spice and pears. When it comes to natural wine, this is some of the best we've tried.
Complex, funky, addictive. Vegan. Organic. Low intervention. 13% ABV. Beware of heavy sediment.
