Parajes 2022 is a village wine with dirt under its fingernails, made from organically farmed old vines high up around Sotillo de la Ribera. Fermented with native yeasts & handled with a light touch. It’s all about dark cherry, bramble and violets, with a little balsamic lift, soft spice and that dusty limestone minerality keeping things fresh. 

Pairs with: Mushroom & manchego croquettes
