What - Sokol Blossor is a vineyard and winery operation based in the southern reaches of the Willamette Valley in Oregon. Over the past decade, Sokol Blossor have been dedicated to crafting modern wine styles with respect for the environment. The couple of sites, farmed under Sokol Blossor, are completely organic and best practice is adopted when it comes to crop density and water usage.
 
The Evolution Red Blend is a beautiful example of non-vintage winemaking. Each grape is fermented on wild yeasts separately before blending and ageing in French barrels. Before bottling, a moderate percentage of last year's wine is added to the blend which ensures the wines ‘evolve’ very slowly over the years (hence the name!). Throughout the process, sulphite and fining agents are kept to a minimum which we love.
 
This is a bold, rich number with plush notes of dried cranberry, forest fruit, figs, chocolate and sweet spice. It's a great crowd-pleaser and will pair well with almost anything - your dinner party go-to!
