What - Stone Springs is a fabulous new collaboration project between winemaker Xavier Goodridge and the guys at Les Caves de Pyrene in Guldford. The aim? To bring awesome sustainable wines in from Australia that can be loved all year round.
 
For this particular cuvee Xavier selects fruit from a parcel harvested from Knights vineyard in the Barossa Valley. This is naturally fermented in tanks before aging in oak for 3 months. To help the grapes sing, Xavier doesn't add anything more than a small amount of sulphur at bottling.
 
The result is a medium bodied shiraz bursting with notes of plum, bramble, black pepper and herbs. Perfect with that wintery lamb roast.
