What - The United cellars of Tekov is a brand new collaboration project between friends and winemaker extraordinaires Marek and Jan. They set up United Cellars as a cooperative with the goal of simply making the best natural wines possible from surplus fruit that may come from their own vineyards and that of their friends. Quite simply the results have been incredible. 
 
Using fruit from the volcanic soils of their Staro Hora and Rybnik vineyards the grapes and hand harvested, pressed and fermented on skins for three days before undergoing a natural fermentation in tank. The juice is then aged on fine lees for 7 months. And what a wine this is....its bright and textured with lashings of tangerine, quince, bergamot and heather honey. It would be a banger with a chicken curry!
